With 8+ years thriving in the arts of culinary, Chef Thomas has accumulated a wide array of cuisines under his belt. From the sandy shores of the pacific to thee waters of the Atlantic, Chef has learned and created cultural and innovated dishes that've captivated his audience. Now located in the breath taking rainforest known as Washington, he's excited to show you his aloha service and jaw dropping dishes.
Mo'olelo (Our Story)
Chef Thomas is a Kanaka Maoli (Hawaiian) from Hawaii. Working through hotels, private events, weddings, competitions in the islands, he sailed his way to America where he had found no ALOHA in culinary service and a huge culture shock. Throughout his time in the states with food service he felt a lack of connection and so birthed the idea of "Changing of the tide" the translation of Nioke in the Hawaiian language. His goal is to create a memorable dinner/event that isn't remember just in the mind but in the heart because Aloha never leaves you!
